It is not easy to look for him in marketplaces, but his bushes can easily be found on the outskirts of meadows and forests. So we can collect fragrant canopies ourselves - by the end of June, and then juicy fruit of elderberry - at the turn of August and September. Just what to do them?
Black has long been recognized for its healing properties. First of all, it strengthens immunity and helps fight infections.
Black lilac flowers contain organic acids, mineral salts, flavonoids, tannins and essential oils. Flower infusions are diaphoretic and diastolic, thus supporting the treatment of cold and flu symptoms. They also have anti-inflammatory and antibacterial activity, which soothes inflammation of sinus and throat mucous membranes.

In turn, black lilac fruits are rich in vitamins A, B, C, iron, calcium, phosphorus, but also in pectins and tannins. They work diuretics, diastolic, also seal and strengthen capillaries, and thanks to anthocyanins, they slow down aging processes.
It is worth collecting flowers of elderberry, because the plant has not only health-promoting values, but also has culinary values appreciated even by great chefs. Flowers are made of, for example, drought (for teas), vinegars, wines and tinctures, and whole canopies, e.g. fried in batter, while fruit is prepared, among others juice.
How to collect gifts of black lilac
– We collect lilac flowers on sunny days when the dew falls. We are looking for places away from settlements and roads. We choose non-flowing flowers and cut down entire canopies. However, we do not dry them in the sun, because they lose their properties.
After cutting the inflorescences, we tie them in bouquets and hang them under the ceiling in a warm, airy place or spread them in an oven preheated to 40 degrees and dry with the door open. We can also freeze fresh.
– We pick lilacs when they are very ripe, together with canopies, wash, tear off peduncles, add sugar and cook e.g. juice.
WARNING! We don't eat fruit raw! They contain sambunigrin and prunazine, which can cause poisoning. Cooked or dried lose these poisonous properties.
